My Favourite Warm Summer Salad

Last year, my brother-in-law, had way too many golden squashes growing, so we ended up having a fair share of it which allowed me to use them in ways that isn't that popular in Australia, well not where we are anyways!

You can use any type of lettuces you prefer, from the fanciest to the cheapest whatever you fancy.

Method:
Wash & rinse lettuce thoroughly & dry (use of a salad spinner is a great idea).
Using you hands break the lettuce leafs to the size you like, add tomatoes in small quarters, sliced Lebanese cucumbers, slice  a red capsicum (lengthwise). Once this is done, slice your squashes, carrots, chop an onion, start by frying your carrots, then onion & squashes (you can do this in a pan with butter, olive oil, or you can grill them instead).

Salad dressing:
In a bowl mix Mayonnaise (about a cup), splash of vinegar(about 1/4 cup), basil(to your liking), freshly squeezed lemon juice. Optional, obviously, as with any salad dressings you can add extra ingredients such a freshly grounded pepper etc.

Salad:
Once your veggies are just right(meaning not overly cooked, leaving a tiny bit of crunch in them), mix lettuce leafs, raw veggies & cooked one all together in a big mixing bowl, top up with salad dressing mix & serve immediatly.

Feel free to add or take out any of the ingredients, add sweet peas to the slightly cooked veggies etc
